For those of us willing to work a little harder than the rest who plonk down $17.95 for Swedish meatballs at Ikea, there is relative delight in making your very own meatballs.
This was, alas, my first time as I was never really interested in the labour associated with making meatballs.
And after doing so, I'm not still very impressed with the labour/output imbalance but hey, at least they tasted alright.
Ingredients
mince beef/pork/lamb.
onion. carrot. cheese (parmesan/fetta).
garlic. fresh rosemary. canned tomatoes.
dried basil. flour/corn starch.
egg. breadcrumbs (optional). chicken stock.
sea salt. freshly ground pepper.
#1 Grate the onion, garlic and carrot. My new toy was put to good use.
#2 Mix together with the mince meat and add cheese and rosemary leaves.
#3 Continue mixing them up and add breadcrumbs (if any), salt and pepper, and a beaten egg. (Yes, please beat it properly)
The final mix should look like something that came out after too many beers.
#4 Using your hands, make the meatballs and coat them with flour.
They should look like Chef's chocolate salty balls.
#5 Heat up the skillet and brown the balls with olive oil.
#6 After browning and removing the balls, proceed with the diced tomatoes and chicken stock.
#7 Upon boiling, add the balls and go absolutely fucking mad with dried basil.
#8 Allow to simmer till the balls are cooked. Should be about 7-10minutes.
#9 Add more cheese. Cause that's the way to enjoy it.
Voila!
Bon appetit!
Additional Notes::
-For a fuller taste, add chilli and red wine vinegar to the tomato mix.
-This, of course, can be easily done with pasta.
-Do not, under any circumstances, use sliced cheese. Trust me on this. I know.
P.S. To Elaine
The sauce consists of the following:
chicken stock. red wine. red wine vinegar. orange liquer.
red capsicums. hot water. peppercorns. dried thyme.
dried basil. garlic. peaches. sea salt. pepper.
Essentially it's all in except for the peaches which go in for the last 5 minutes.
You have to boil that entire mishmash of stuff for in excess of an hour.
The capsicums are simply for colour, you should remove them before adding the peaches.
Hope you enjoy it. Cheers.
